The verb "to change" is used in English for a variety of purposes, both formal and informal. You have to be more exact in Hebrew. These verbs may be divided into
3 groups
to initiate change (abstract)
to change money/ convert a document
to turn into something or exchange for something
We may go one step further for points 2 and 3 and determine if we alter anything else or whether it changes on its own without our intervention. An item or person is becoming something when it is transforming into something else. The primary binyan of self-transformation is hitpael.
Summary
to initiate change (abstract) : root ש נ ה in hifil
to change money/ convert a document: root מ ו ר in hifil
to turn into something or exchange for something: root ח ל פ in hifil and hitpael
